Irish opened and operated Sprout & Co opened their first Galway city
restaurant in June 2026, with the official first day otherwise 27th and
a few soft openings during the preceeding days.
They're located in Eyre Square, near the top-left corner, in between Lil Bro's
pizza and Caffe Nero. The building was previously home to Permanent TSB
bank (before they moved across the road to the old Ulster Bank site).
The ground floor has bee used as a ticket office for Galway Arts Festival a
couple of times, and last Halloween it hosted a costume pop-up.
But Sprout have put in the work to restore the exerior, and to fit out
the interior as a pleasant, healthy fast-food outlet.
Aiming to serve food that is locally sourced, seasonal and healty, Sprout's
menu currently features around bowls (based on rice) and wraps, which are
served with a range of flavour combinations and condiments, eg tahini
fishbowl, middle Eastern chicken, SuperGreek salad, Tokyo bowl - and many
more.
One thing to be aware of - their stores are all card-payment only.
Cash isn't accepted.
